Easy Soft Emmer Scones

There’s something special about freshly baked scones.
Warm from the oven, lightly golden on the outside, and soft in the middle, they're perfect for a cosy breakfast, afternoon tea, or a simple snack with your favourite cup of coffee.
These Emmer Scones are easy to make with wholesome ingredients and come together in just a few minutes. The combination of wholegrain and sifted emmer flour gives them a lovely texture, while the vanilla coconut yoghurt adds a subtle sweetness and softness.
Healthy eating doesn't have to be complicated. Sometimes it's as simple as baking a batch of homemade scones and enjoying them warm from the oven.
Ingredients
100 g wholegrain emmer flour
100 g sifted emmer flour
½ tsp baking soda
1 tbsp honey
A pinch of salt
25 g butter, softened
150 g vanilla coconut yoghurt (or lactose-free Greek yoghurt)
0.5 dl oatmilk
1 egg, for brushing
Method
Preheat the oven to 180°C (350°F).
Line a baking tray with baking paper.
In a large bowl, combine the wholegrain emmer flour, sifted emmer flour, baking soda, sugar, and salt.
Add the softened butter and rub it into the flour mixture until combined.
Stir in the yoghurt and milk, mixing gently until a soft dough forms.
Transfer the dough to a lightly floured surface and roll it into a long log.
Cut into 10 equal pieces.
Shape each piece into a round scone, approximately 3 cm thick.
Place the scones on the prepared baking tray.
Brush the tops with beaten egg.
Bake in the centre of the oven for approximately 15 minutes, or until golden and cooked through.
Allow to cool slightly before serving.
Nina's Tip
These scones are best enjoyed slightly warm. Serve them with butter, your favourite jam, or simply as they are.
They also freeze beautifully, making them perfect for busy days when you want something homemade without any fuss.
