Warm Apple & Jujube Breakfast Bowl

There is something special about starting the day with a warm breakfast.


This simple Apple & Jujube Breakfast Bowl is gently spiced with cinnamon and naturally sweet from apples and red dates. It's one of those comforting recipes that fills the kitchen with the most wonderful aroma while requiring very little effort.


I love making this on slower mornings, but it's equally lovely prepared ahead and gently reheated. Served with homemade muesli and Greek yoghurt, it becomes a satisfying breakfast that's both simple and delicious.


Serves 1–2

Ingredients

  • 1 red apple

  • 5 red jujube dates

  • 2.5 dl water

  • 1 tbsp chia seeds

  • 1 tsp Ceylon cinnamon


To Serve

  • Homemade muesli

  • Granola

  • Greek yoghurt


Method

Prepare the Fruit

  1. Cut the apple into small pieces.

  2. Cut each jujube date into four pieces.


Cook

  1. Bring the water to a boil in a small saucepan.

  2. Add the apple and jujube dates.

  3. Cover with a lid and simmer for 10 minutes.


Add the Chia & Cinnamon

  1. Lower the heat.

  2. Stir in the chia seeds and Ceylon cinnamon.

  3. Simmer gently for another 5 minutes.


Rest

  1. Remove from the heat.

  2. Leave the lid on and allow the mixture to rest for approximately 30 minutes.


This allows the flavours to develop and the chia seeds to create a lovely texture.


Serve

Spoon into a bowl and serve with:

  • Homemade muesli

  • Greek yoghurt


Nina's Tip

This recipe is wonderful to prepare the night before.


Simply store it in the refrigerator and gently warm it before serving. Add the yoghurt and muesli just before eating to keep everything fresh and crunchy.
