Easy Homemade Granola

There is something incredibly satisfying about having a jar of homemade granola ready in the kitchen.


It's one of those recipes I come back to again and again because it's simple to make, stores beautifully, and works with so many different breakfasts and snacks throughout the week.


Sprinkle it over yoghurt, chia pudding, smoothie bowls, or enjoy it with milk. It also makes a lovely homemade gift when packaged in a glass jar with a handwritten tag.


Once you've made your own granola, it's hard to go back.


Ingredients

  • 2 cups gluten-free oats

  • 1 cup walnuts (or almonds)

  • 1 cup flax seeds

  • 1 cup sunflower seeds

  • 1 cup shredded coconut

  • 1 cup sesame seeds

  • 1 cup pumpkin seeds

  • 4 tsp Sukrin Gold

  • 4 tsp Ceylon cinnamon

  • 6 tbsp coconut oil

  • 1 cup water

  • A drizzle of Himalayan salt

  • Optional: a little Molkosan


Method

  1. Preheat the oven to 190°C using the fan setting.

  2. Add all the dry ingredients to a large baking tray and mix well.

  3. Pour the water evenly over the mixture.

  4. Dot the coconut oil across the top.

  5. Place the tray in the centre of the oven.


Bake and Stir

  1. Bake in 10-minute intervals.

  2. Remove the tray and stir the granola each time.

    This helps everything toast evenly and prevents burning.

  3. Continue baking until the granola reaches your preferred level of golden colour and crunch.

    This may take approximately 40 minutes in total.

  4. Remove from the oven and allow to cool completely.


As the granola cools, it will become even crispier.


Storage

Store in an airtight glass jar or container.

I often make a large batch and keep it ready for busy mornings.
