Easy Caesar Salad with Homemade Dressing

Some recipes never go out of style, and Caesar salad is definitely one of them.


With crisp vegetables, a creamy homemade dressing, and plenty of flavour, it's one of those meals that feels both simple and special at the same time.


I love serving this salad for lunch with friends, sharing it as part of a family meal, or simply enjoying it on my own when I want something fresh and satisfying.


The homemade dressing is what really brings everything together. It's rich, creamy, and full of flavour, making even the simplest ingredients feel a little more special.


Healthy eating doesn't have to be complicated. Sometimes it's just a bowl of fresh ingredients, a delicious dressing, and taking a moment to enjoy your meal.


Homemade Caesar Dressing

Ingredients

  • 2 cloves garlic

  • Juice of ½ lemon

  • 2 tsp Worcestershire sauce

  • 2 tsp Dijon mustard

  • 2 tbsp pickles

  • 2–3 dl good-quality olive oil

  • ½ tsp freshly ground black pepper

  • ⅓ tsp Himalayan salt


Method

  1. Add all the ingredients to a mixing bowl.

  2. Using a hand blender, blend until smooth and creamy.

  3. Taste and adjust seasoning if desired.


The more olive oil you use, the milder the flavour will become.


The Salad

Ingredients

  • 1 crisp heart lettuce

  • 1 sweet red bell pepper

  • 1 can corn, drained

  • ½ cucumber

  • 1 handful fresh parsley

  • ½ red onion

  • 1 celery stalk

  • Free-range chicken or your preferred plant-based alternative

  • Freshly grated Parmesan


Vegetarian Option

If you'd like a vegetarian version, you can replace the chicken with:

  • Jackfruit

  • Roasted eggplant

  • Chickpeas


Method

  1. Wash and prepare all the vegetables.

  2. Slice the lettuce, bell pepper, cucumber, onion, celery, and parsley.

  3. Add everything to a large serving bowl.

  4. Add the chicken or plant-based alternative.

  5. Toss with the Caesar dressing.

  6. Finish with freshly grated Parmesan.


Nina's Tip

The dressing can be made ahead of time and stored in the refrigerator, making it easy to pull this salad together on busy days.


It's also delicious served alongside soup, grilled vegetables, or fresh homemade bread.
