This Creamy Chocolate Chia Pudding comes together in just a few minutes and transforms into a rich, chocolatey treat while it rests. It's smooth, satisfying, and perfect for keeping in the fridge whenever you fancy something sweet.


I love recipes like this because they're easy to prepare ahead of time. Whether you enjoy it for breakfast, as an afternoon snack, or as a simple dessert after dinner, it's one of those recipes that always feels like a little treat.


And if you're feeling extra indulgent, a drizzle of vanilla sauce on top is never a bad idea.


Ingredients

  • 4 dl full-fat coconut milk

  • 4 tbsp chia seeds

  • 1 tsp coconut sugar, maple syrup, or honey

  • 2 tbsp raw cacao powder

  • ¼ tsp Himalayan salt

  • ½ tsp vanilla extract

  • Optional: ½ tsp Ceylon cinnamon


Method

  1. Add all the ingredients to a mixing bowl.

  2. Whisk until everything is well combined.

  3. Pour the mixture into a serving bowl or glass jar.

  4. Place in the refrigerator for 6–8 hours, or overnight, to allow the chia seeds to expand and thicken the pudding.


Short on Time?

You can leave the pudding at room temperature for approximately 2 hours instead.


The texture will be slightly softer and less firm than the refrigerated version, but equally delicious.


Serving Suggestions

This pudding is lovely served on its own, or topped with:

  • Fresh berries

  • Coconut flakes

  • Chopped nuts

  • A drizzle of vanilla sauce

  • A sprinkle of cinnamon
