Easy Homemade Falafel

There are some recipes that are always worth having in your collection, and homemade falafel is definitely one of them.
These falafels are crisp on the outside, soft in the middle, and packed with flavour from herbs and spices. They're perfect for lunch, dinner, sharing platters, wraps, salads, or simply enjoying as a snack straight from the pan.
One of the things I love most about falafel is how versatile they are. Make a batch ahead of time and you'll have something delicious ready for busy days throughout the week.
Ingredients
175 g chickpeas
100 g yellow onion
6 g garlic
1 handful fresh coriander (or ½ tsp coriander powder)
1 tsp baking soda
½ tsp potato flour
1 tsp Himalayan salt
1 tsp paprika powder
½ tsp cumin
½ tsp cardamom
½ tsp chilli powder or cayenne pepper
5–8 tbsp gram flour (chickpea flour)
Method
Add the chickpeas, onion, garlic, coriander, baking soda, potato flour, salt, and spices to a food processor.
Blend until a smooth mixture forms.
Gradually add the gram flour until you have a firm dough that holds its shape.
Heat approximately 1 tablespoon of coconut oil in a frying pan.
Shape the mixture into small balls.
Fry until golden and crisp on both sides.
Transfer to a plate and allow them to cool slightly before serving.

Or simply enjoy them as they are.

Falafel are perfect for meal prep.
