Chocolate Oat & Coconut Cookies

There is something special about homemade cookies fresh from the oven.


These Chocolate Oat & Coconut Cookies are crisp on the outside, soft in the middle, and filled with chunks of dark chocolate. They're simple to make, wonderfully satisfying, and perfect with a cup of coffee or tea.


This recipe was created during an afternoon of experimenting in the kitchen, and it quickly became a favourite. The combination of oats, coconut, and chocolate creates a delicious texture that's difficult to resist.


Healthy eating doesn't mean never enjoying cookies. It means finding a balance that works for you and making room for foods you genuinely enjoy.


Ingredients

Oat Mixture

  • 2 cups gluten-free jumbo oats

  • 2 tbsp Mykosan

  • 8 tbsp water


Flax Mixture

  • 2 tbsp flaxseeds, freshly ground

  • 4 tbsp water


Dry Ingredients

  • 1 cup shredded coconut

  • 2 tbsp buckwheat flour

  • 1 tsp Himalayan salt

  • 1 tsp psyllium husk


Wet Ingredients

  • 8 tbsp agave syrup or maple syrup

  • 8 tbsp melted extra virgin coconut oil

  • Flax mixture


Chocolate

  • 100 g dark chocolate, roughly chopped


Method

  1. In a large bowl, combine the oats, Mykosan, and water.

  2. Stir well and leave to soak for approximately 2 minutes.

  3. Grind the flaxseeds and mix with the water.

  4. Leave the flax mixture to sit for approximately 2 minutes.

  5. Add the shredded coconut, buckwheat flour, Himalayan salt, and psyllium husk to the oat mixture.

  6. Stir until well combined.

  7. Add the agave or maple syrup, melted coconut oil, and flax mixture.

  8. Mix until everything is evenly incorporated.

  9. Fold in the chopped dark chocolate.


Baking

  1. Preheat the oven to 180°C using conventional top and bottom heat.

  2. Shape the mixture into small cookies.

    If the mixture sticks to your hands, lightly dampen them with water.

  3. Place the cookies on a lined baking tray.

  4. Bake in the centre of the oven for approximately 20 minutes.

  5. Allow the cookies to cool completely before serving.


Storage

Store in an airtight cookie jar or container once cooled.

These cookies are wonderful for making ahead.


Keep a batch in the cookie jar for when friends stop by, or freeze some for later and simply thaw when needed.
