Homemade Granola Bars with Chocolate Topping

If you're looking for a simple homemade snack that's easy to prepare ahead of time, these granola bars are a wonderful recipe to have on hand.
Made with oats, seeds, coconut, and dates, they're chewy, satisfying, and perfect for busy days when you need something quick and delicious.
I originally created these bars as a simple snack for the family, and they quickly became a favourite. They're perfect for lunchboxes, afternoon snacks, or those moments when you want something homemade ready to grab from the fridge.
Healthy eating doesn't have to be complicated. Sometimes it's simply about preparing a few nourishing options ahead of time and making everyday life a little easier.
Ingredients
Granola Bars
4 dl gluten-free organic oats
2 dl shredded coconut
1 dl pumpkin seeds
1 dl sunflower seeds
4 tbsp sesame seeds
200 g chopped dates
½ dl agave syrup
50 g melted extra virgin coconut oil
1 dl boiled ginger water
½ tsp Himalayan salt
Method
Preheat the oven to 220°C.
Combine the oats, shredded coconut, pumpkin seeds, sunflower seeds, sesame seeds, and Himalayan salt.
Spread the mixture onto a baking tray.
Roast for approximately 10 minutes, or until lightly golden.
Remove from the oven and allow the mixture to cool until lukewarm.
Transfer the roasted mixture to a large mixing bowl.
Add the dates to a food processor and process until finely chopped.
Add the chopped dates to the bowl along with the agave syrup, melted coconut oil, and boiled ginger water.
Mix everything together until a sticky dough forms.
Line a 35 x 25 cm baking dish or tray with baking paper.
Transfer the mixture to the prepared dish.
Using your hands or a spatula, press the mixture down firmly and evenly.
Refrigerate for approximately 6 hours, or until firm.
Once chilled, cut into bars or squares.
You can also add the chocolate topping before cutting if desired.
Chocolate Topping
Ingredients
120 g agave syrup
60 g melted extra virgin coconut oil
60 g cacao powder
Method
Melt the coconut oil.
Add the agave syrup and cacao powder.
Whisk until smooth.
Pour over the granola bars or drizzle decoratively across the top.
Allow the topping to set before cutting and serving.
Nina's Tip
Store the bars in an airtight container in the refrigerator for up to two weeks.
You can also wrap individual bars in baking paper, making them perfect for lunchboxes, busy mornings, or taking with you on the go.
