Ingredients

  • 4 dl full-fat coconut milk

  • 4 tbsp chia seeds

  • 1 tbsp maple syrup

  • ¼ tsp Himalayan salt

  • 200 g frozen organic strawberries


Method

  1. In a bowl, combine the coconut milk, chia seeds, maple syrup, and Himalayan salt.

  2. Stir well and leave the mixture to sit until the chia seeds have expanded.

    This can take approximately 2 hours at room temperature or overnight in the refrigerator.

  3. Add the frozen strawberries to a blender and blend until smooth.

  4. Once the chia mixture has thickened, gently fold in the strawberry puree until fully combined.

  5. Serve immediately or chill until ready to enjoy.


Serving Suggestions

This pudding is delicious on its own, but you can also serve it with:

  • Fresh berries

  • Homemade granola

  • Coconut flakes

  • A drizzle of vanilla sauce

  • Chopped nuts


Nina's Tip

The more frozen the strawberries are when blended, the thicker and creamier the pudding will become.
