Chocolate Coconut Energy Bites

Looking for a simple homemade treat that comes together in minutes?
These Chocolate Coconut Energy Bites are soft, rich, and naturally sweetened with dates. They're perfect when you want something satisfying with your afternoon coffee, a little snack between meals, or a healthier homemade treat to keep in the fridge.
Made with just a handful of ingredients, they're easy to prepare and require no baking at all.
I often keep a batch in the fridge for those moments when I fancy something sweet but don't want to spend time in the kitchen.
Best of all, they're made in just a few minutes using a food processor.
Ingredients
100 g dates
15 g gluten-free oats
1 tbsp cacao powder
1 tbsp water
1 tbsp coconut oil
1 tsp moringa powder (or another mild green powder)
For Rolling
Shredded coconut
Method
1. Measure all ingredients and add them to a food processor fitted with an S-blade.
2. Blend until the mixture becomes smooth and holds together well.
3. Place some shredded coconut in a separate bowl.
4. Using a teaspoon, scoop small portions of the mixture and roll them into bite-sized balls.
5. Roll each ball in the shredded coconut until coated.
6. Place on a tray or plate and refrigerate for a few hours, or overnight, until firm.
Nina's Tip
These energy bites store beautifully in the refrigerator for at least a week, making them perfect for meal prep and busy days.
You can also make a double batch and freeze some for later.
