If you love a good grilled cheese sandwich but fancy trying something a little different, this Sweet Potato Grilled Cheese Sandwich is a fun and delicious alternative.
Using sweet potato slices instead of bread creates a wonderfully flavourful sandwich that's crispy on the outside, melty in the middle, and surprisingly satisfying.
One of the things I love most about this recipe is how simple it is. You can use your favourite sandwich fillings and make it your own.
Perfect for lunch, a light dinner, or whenever you're craving a comforting toastie.
Ingredients
For one sandwich:
4 thin slices sweet potato (approximately 1 cm thick)
Coconut oil or butter, for cooking
Filling
I used:
Homemade ketchup
Mustard
Salt
Black pepper
Red onion
Italian sheep cheese
Fresh spinach
You can also customise the filling with your own favourites.
Method
Slice the sweet potato into four thin slices, approximately 1 cm thick.
Lightly spread coconut oil or butter on the outside of each slice.
Add your chosen fillings between two slices of sweet potato.
Top with the remaining sweet potato slices to create a sandwich.
Cook until the sweet potato is tender and the cheese has melted.
Serve warm and enjoy immediately.
Nina's Tip
The thinner the sweet potato slices, the easier they are to cook through while still becoming beautifully golden on the outside.
Feel free to experiment with different cheeses, vegetables, and spreads depending on what you have available.
