Do you love a good toast? You`re not that into bread? Well, a sweet potato will do the trick. This is such a delicious alternative to your traditional grilled cheese sandwich, For this meal, I used 4 thin slices of sweet potatoes. Cut each slice 1 cm thick. Spread on coconut oil or butter on the outside, and then fill it with your choice for a grilled sandwich. Yummy!! I love a good spring role, and these are wrapped with paper-thin rice paper, making them super soft. As the traditional with filo paper in stores is made with wheat, I prefer the rice paper. The consistency will however be very different with this two wrappings. By using filo paper I would therefore suggest try making the dough from scratch. A taste of summer
1 box creamy coconutmilk
2 tbs chiaseeds
1 box of pineapple in its own juice. (Avoid the ones with sugar water....)
1 inch grated ginger
Can also add a drizzle of Himalayan salt if your taste buds like it.
Take the box of pineapple in a blender and mix it to a liquid. Then just mix everything together and let it sit for at least 30 minutes. .
It's wonderful for both the looks and the taste to garnish it with more grated ginger and some chopped pistachios.

Just mix everything up in a food processor until a smooth consistency. Make small balls and roll them in shredded coconut.
I prefer serving them cold, so put them on the fridge or freezer. In my house half of them however disappear before they get in the fridge....
